10 years on and I'm still enjoying modelling. With four adorable children 5 and under to feed - not forgetting a very hungry husband as well - making quick healthy tasty food means I can balance my work and home life....that's the plan anyway!! Rosti Potatoes





Its been busy busy times for me. I have 5 weeks left until baby number 4 arrives.  My 3 children have been poorly and off school for 2 weeks.  I am also still trying to work. I did a yoga maternity shoot last week which was bliss. A day away from the poorly crew! I also got to choose some clothes which have arrived today, so maybe things are looking up.

I made Rosti Potatoes last week for the first time in ages, my children loved them.  You can make loads and freeze them, which is a bonas for any busy Mum, right?
Ingredients
500g potatoes
oil
Method
Peel and chop potatoes.  Part boil for about 5/7 minutes, drain and allow to cool.When cooled, grate.  They need to be cold or they will not grate they will just mash in your hands. (use a blender on grate if you have one)
Form into small patties
Heat the oil in the pan and fry patties.  Don't move them for about 5 minutes or they could fall part but cooking for 5 minutes on one side really makes them hold together.
Serve!  They are so tasty. You could also cool some and freeze them in freezer bags for another day.
