10 years on and I'm still enjoying modelling. With four adorable children 5 and under to feed - not forgetting a very hungry husband as well - making quick healthy tasty food means I can balance my work and home life....that's the plan anyway!! I'm happy to share my tried and tested favourite recipes with other parents. I hope you enjoy them as much as we do..... Love Gemma xxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxx

Puff Pastry Topped Pizza

The snow was very pretty today. Merina was very excited and kept asking when was Santa coming! Tallulah (16 month old mini wrecker) this morning as usual was busy emptying my bathroom cupboard. I told her off, she turned grabbed the leg of my dressing table and pulled it over in one massive temper!(check out my picture) She and I were very shocked at the result! All my mirrored boxes have smashed and my favourite hard box glass handbag. I have no idea where this temper has come from!

This dinner is a goody, quick and a guaranteed winner.

Ingredients
  • 1 sheet puff pastry
  • 1 mozzarella ball
  • 2 tomatoes
  • 2 slices ham
  • Handful of olives
  • Handful of sweetcorn

Method

  1. Lay puff pastry sheet onto baking tin.
  2. Slice all the ingredients and lay them on the pastry in layers, leaving a gap around the edge so the pastry can rise. Sprinkle over the olives and sweetcorn.
  3. Cook for 15 minutes at 180 c until the puff pastry has risen and gone golden round the edge and serve.
