10 years on and I'm still enjoying modelling. With four adorable children 5 and under to feed - not forgetting a very hungry husband as well - making quick healthy tasty food means I can balance my work and home life....that's the plan anyway!! I'm happy to share my tried and tested favourite recipes with other parents. I hope you enjoy them as much as we do..... Love Gemma xxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxx

Soda Bread

/a> Today has been a really domestic day I've cooked, cleaned and generally been bossy around the house I've even booked a fabulous family holiday loads cheaper after searching lots sites on the net! My baby River has croup and as I type he's coughing away next door I really hope he sleeps.
I made soup for lunch which goes really well with soda bread. This recipe was given to me by my sister in law Camilla (who is also very bossy and Swedish!) If anyones makes it and likes it let me know, or any tips on croup let me know too!!

Ingredients
370 g plain flour
130 g wholemeal flour
1 teaspoon bicarb soda
1 teaspoon salt
40g melted butter
340g buttermilk
1 tablespoon treacle

Method
Miss all the ingredients together to form a dough (no need to knead) just combine all ingredients. Roll into a ball and make a cross on top. Bake in middle of oven for about 40 Min's at 180 until golden brown, Turn down and cook for a little longer if it looks like its going to brown!
Serve warm with butter. Great with soup or a stew.

  1. Okay so we improved buttermilk using standard cows milk into which I put a tbs lemon juice and a dash of wine vinegar and allowed to curdle for 5 mins. Used black treacle because that's all we had. Apart from being brown and not white (black treacle I guess?) it tastes divine. Now to make soup for yea. Thanks Gems xx
