10 years on and I'm still enjoying modelling. With four adorable children 5 and under to feed - not forgetting a very hungry husband as well - making quick healthy tasty food means I can balance my work and home life....that's the plan anyway!! I'm happy to share my tried and tested favourite recipes with other parents. I hope you enjoy them as much as we do..... Love Gemma xxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxx

Blueberry Breakfast Muffins

The weatherman says it going to snow tomorrow?! Maybe it will give me some new inspiration for baby names. Its so hard to name a baby, feels as if I've been looking for months now and I'm fast running out of time! I've seven weeks left to decide on a good one, we love the "far out" names even though its had my mum cringing at some of the suggestions!

My girls always seem bored with the usual breakfast choices so I've made them blueberry muffins for tomorrow for a midweek treat! Easy to make and delicious to eat!

Ingredients
  • 10 oz self raising flour
  • 5 oz sugar
  • 5 oz fresh blueberry
  • 1 egg beaton
  • 180 ml milk
  • 5 oz butter

Method

  1. Mix all the dry ingredients together first then mix in the wet ingredients. Add the blueberries at the end so they don't burst to much!
  2. Spoon the mix into muffin cases 3/4 full.
  3. Cook for 20 minutes 180 c. I'm thinking of severing them with yogurt for breakfast! Yum.

  1. Yes I'm afraid Granny Pig does cringe its just my gut reaction!!I'm sure whatever name you choose for your son will be fantastic. How about Michaelangelo (credit to THE one and only at FM Models!) or Muffin? - highly topical with today's recipe. See what a help I am xxxxx
