10 years on and I'm still enjoying modelling. With four adorable children 5 and under to feed - not forgetting a very hungry husband as well - making quick healthy tasty food means I can balance my work and home life....that's the plan anyway!! Pumpkin Soup




Today I have found out that Merina is an angel in her school nativity play! I'm so excited I was worried that she would be a rock or a tree so I'm super delighted! I think I have to make her costume. I will be making the bestest most sparkly angel costume ever! Wow I never knew I would be such a pushy Mum it just comes over me! I'll be first in the queue in a few weeks!


Pumpkin soup, I made by default of having so much pumpkin in the house but its sooooo tasty. All my darlings loved it I'll be making it again!

1 pumpkin - remove all the flesh

1 onion chopped

1 garlic clove crushed

1 tbsp olive oil

1 pint veg stock

1/4 pint creme fraiche or single cream.


Cook the pumpkin, onion, and garlic in the oil in a large saucepan on a medium heat until softish 10Min's.

Add the stock bring to the boil and simmer for 10 Min's until all the pumpkin is cooked and soft.

Pour/spoon into a blender. Blend.

Stir in creme fraiche/cream. Serve with buttered bread. Its soooo tasty and healthy you wont believe it!
