10 years on and I'm still enjoying modelling. With four adorable children 5 and under to feed - not forgetting a very hungry husband as well - making quick healthy tasty food means I can balance my work and home life....that's the plan anyway!! Banana Fruit Loaf

 I'm now 18 weeks pregnant with my 4th baby and time is flying.  Is there ever enough time to be ready for baby number 4?! I imagine that holidays won't be that relaxing from next summer. My mum says I need to be more organised and stop shouting?  But we are a happy house full of shouters!!


This is easy to make and feeds them when they want to snack plus it has quite a lot of fruit in it Whoop whoop - give it a go.

Ingredients

3 very rip bananas
1/2 lemon juice
4oz butter/marg
2 .5oz caster sugar
2 eggs
pinch of salt
8oz self raising flour
3/4 oz dried fruit I used cherries, raisins, sultanas

Method
Turn oven 180c grease and line a 1kg loaf tin.
Mash the bananas and lemon juice together to make a paste
cream the butter and sugar in a separate bowl
whisk the eggs and pinch of salt, fold in the flour.
Stir in the bananas and dried fruit.
Pour the mixture into loaf tin and bake for 60 minutes. test with a skewer - poke skewer in the middle of cake.  Its cooked if it comes out clean.
Serve warm and buttered its yummy and your kids with love it!
